Los Bejucos is the name of the newly created designation of origin (D.O.) located in the central part of the Dominican Republic. This cacao is harvested by small producers in the area, then fermented and dried on the Esmeralda estate.
At the Casa Cacao workshop, we select the cacao by hand, we roast it, crack and winnow the beans, add organic cane sugar and cocoa butter, and then we conche it for a minimum of 48 hours.
The D.O. Los Bejucos 84% chocolate bar has been recognized with the silver award at the Academy of Chocolate Awards.
