50% Cacao and Sheep's Milk.
Los Bejucos is the name of the newly created designation of origin (D.O.) located in the central part of the Dominican Republic. This cacao is harvested by small producers in the area and then fermented and dried on the Esmeralda estate.
At the Casa Cacao workshop, we select the cacao by hand, we roast it, crack and winnow the beans, add organic cane sugar and cocoa butter as well as whole sheep's milk powder, and then we conche it for a minimum of 48 hours.
The D.O. Los Bejucos 50% chocolate bar has been recognized with the bronze award at the Academy of Chocolate Awards.
