Kaithapara Forest, Kerala, India
Cacao collected and fermented by 71 communities in the Kaithapara forest, in Kerala (India), where fruits such as papaya, coconut and mango as well as spices such as black pepper, cardamom and cashew grow.
At the Casa Cacao workshop, we select the cacao by hand, we roast it, crack and winnow the beans, add organic cane sugar and cocoa butter, and then we conche it for a minimum of 48 hours.

We find a very pleasant lactic acidity and notes of dry raisins and apricot, without any astringency or bitterness.
