Toasted, crumbled and broken cacao beans are called cocoa nibs.
Cacao from D.O. Los Bejucos, Domenican Republic. Los Bejucos is the name of the newly created designation of origin (D.O.) located in the central part of the Dominican Republic. This cacao is harvested by small producers in the area, then fermented and dried on the Esmeralda estate.
At the Casa Cacao workshop, we select it by hand, roast it, crack and winnow the beans into small pieces called nibs.
